Halloween is one of the most popular times of the year. It is fun for the kids and for adults, it can be scary, creepy or cute. Throughout October my recipes are going to be based around Halloween, Thanksgiving and Fall. Just because were adults doesn’t mean we cant have fun right? Pumpkin Spice Cupcakes
- 3/4 cup pumpkin puree
- 2 large eggs
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp fresh ginger grated
- 1/4 tsp cloves
- 1/2 tsp salt
Preheat oven to 350 F
Prepare one 12 cup muffin tin with your Halloween liners
Combine pumpkin, eggs, sugar, oil in mixing bowl and mix until combined
In separate bowl, mix together all the dry ingredients
Mix the dry ingredients into the pumpkin mixture. Mix until all the ingredients are combined. Don't over mix, just mix until you can't see anymore of the flour
Spoon evenly into 12 muffin cups
Bake @ 350 F for about 20 minutes or until a toothpick inserted into the middle of a cupcake comes out clean
Let cool in pan for a few minutes. Remove them from the pan and place on a wire rack to continue to cool to room temperature.

Now for the frosting. This is my go to frosting for almost everything. The secret to getting it to the consistency you want for whatever you want to decorate is the milk.
I use milk instead of water because it makes it less sweet and creamier. You can use this icing for flowers, filling or icing your cakes and cupcakes. Start out with 1 to 2 tsp of milk and mix. Keep adding milk 1 tsp at a time until your reach the consistency you want.
Another thing I do with this icing is with the shortening. I use butter flavoured shortening so you still get a hint of butter taste.
- 4 cups icing sugar
- 1 cup shortening butter flavour
- 1 tsp vanilla
- 5-6 tsp milk
- orange food colouring
If using a stand mixer, add shortening and icing sugar together and mix slowly. Just slow enough to start mixing it without it flying all over the place. Then add the rest of the ingredients. Except food colouring.
Mix on high for 5 minutes for smooth and creamy icing. When you have it to the consistency you want, add the colouring a little at a time until you get the right colour. REMEMBER: You can always add more, but you can't take it back.
