You would never guess that I’m allergic to chocolate by my latest recipes could you? Well thank goodness my allergy isn’t bad enough to keep me away from this new recipe and my all new favourite treat.

I swear if I don’t stop baking, I’m going to gain 50 lbs before Christmas day. As you all know, a great baker always has to taste test their goodies before serving them right? Well at least that’s my motto and I’m sticking to it.

This Chocolate Pecan Christmas Bark is very simple and OMG so delicious! This one didn’t even make it to the freezer for Christmas day,  I have to make more because they ate it all right out of the pan!

Chocolate Pecan Christmas Bark

Caramel Sauce

Add water, lemon juice and sugar into medium size pot. Over medium heat –  high heat bring to a boil WITHOUT stirring. Brush sides down with water in the pot. Once it is at a hard boil, add butter and whisk in cream. Stir consistently until is stops boiling. It should be a beautiful amber colour. Stir in vanilla and salt. Take off burner, set aside and let cool to room temperature.

Melt 9 ounces of the chocolate in double boiler. When chocolate reaches 113 ( with a candy thermometer ) take off heat. Let it cool until it reaches 82 (do this by adding the other 3 ounces of chocolate ). Put it back on the stove and warm to 88 – 90 on candy thermometer. Take the chocolate off the heat. This will set quickly so spread on parchment lined baking tray. Spread out thinner than a chocolate bar but thicker than a sheet of paper.

The Swirl

Spoon drizzle caramel all over the chocolate in circles. Take a skewer and gently work caramel through chocolate. Swirl don’t stir.

Add toppings: Crushed salted pretzels and crushed pecans.

The Finishing Touch

Melt 2 ounces of white chocolate and drizzle all over the top. Let it set up, crack it and package it!

Ingredients
Caramel Sauce
  • 3 tablespoons water

  • 1/3 cup whipping cream
  • 1/2 cup butter cut into pieces
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Tempered Chocolate
  • 12 ounces semi sweet chocolate
