The Christmas Cookie Change Up

I have to tell you that Anna Olson is my hero! I have made so many Christmas Cookies already and it’s all thanks to her wonderful Icebox Cookie Recipe.

Just from the one recipe, you can make so many different kinds of cookies! I made all the dough the night before ( in less than 30 minutes)my baking day. I was able to make 5 different kinds of cookies all from the Icebox Cookie dough. No one would ever know they were actually all the same cookie, just with a change of extracts ( almond for vanilla etc..).

This one Icebox Cookie Recipe will give you :

  1. Vanilla Icebox Cookies
  2. Chocolate Icebox Cookies
  3. Linzer Cookies
  4. Orange Marmalade Crumble Bars
  5. Rugelach Cookies ( I call them Little Crescent Cookies)

Ingredients
  • 1 Icebox cookie dough
  • 1 teaspoon almond extract
  • 1 cup raspberry jam
Instructions
  1. When making the Icebox Cookie Dough , replace the vanilla extract with almond extract.. Roll the dough into 2 discs ( one for tops and one for the bottoms) wrap each with plastic wrap and chill. 

  2. When ready to use, knead it to soften and dust counter with flour. Roll 1/4 inch thick. Use a 2 inch fluted cutter and cut out bottoms

  3. Cut out tops the same as you are the bottoms, except for the tops, use a small cutter to cut out a small hole in the center of each one.

  4. Bake bottoms at 325 F for 12 minutes. When baking the tops you might want to take out a little sooner, they bake faster.  Let cool completely.

  5. Add about 1/2 tsp of raspberry jam to each bottom in the center.  Place the top cookie on top and gently press down, spreading the jam throughout the cookie. Repeat for each cookie

Orange Marmalade Crumble Bar

This is the family favourite out of all 5 cookie flavour.

Course: Cookies
Servings: 36 bars
Ingredients
  • 1 Icebox Cookie Dough Mix (chilled) When making this dough add the zest of an orange into the mix
  • 1 cup orange marmalade
Instructions
  1. Grate the chilled dough into a bowl, just as you would cheese. Using an 8 inch square pan, grease and line with parchment paper. Press 2/3 of the dough into the bottom pressing firmly and making it level

  2. Spread 1 cup orange marmalade evenly over bottom crumble.

  3. Take the remainder of the grated dough and spread evenly over the marmalade. Loosely press it on top of the marmalade so it still looks loose and pretty.

  4. Bake at 325 F for 45 minutes, until golden brown around the edges. Cool completely.

  5. Dust with icing sugar before cutting.

Ingredients
  • 1 Icebox cookie dough When making dough, add the zest of 1 lemon.
  • 1 jar apricot jam
Instructions
  1. Shape the dough into 6 discs and chill

  2. When ready to use, knead the dough so you are able to roll it. Sprinkle flour on baking surface. Roll one of the discs into an 8 inch circle. Use 7 inch tart ring ( I made a circle from parchment paper, as I don't have a tart ring ) . Trim away the edges making a perfect circle ( as close to perfect as you can lol ) 

    Using a pastry cutter, divide into 4, then into wedges

  3. Spoon Apricot jam at the wide part of each wedge. Take each wedge and roll it from the wide end towards the narrow ( like a Croissant )

  4. Brush each cookie with an egg wash ( 2 tablespoons water, 1 egg ) 

  5. Bake at 325 F for 18 minutes. Sprinkle with cinnamon sugar
