Baking To The 80’s

I have lived, breathed, cooking and baking shows these last two weeks. I desperately want to change things up this Christmas with some different kinds of goodies. Thank you Anna Olson and her Baking show!

She showed me how to make Icebox cookies and how many ways you can make them with one very simple base recipe. I have never really worked with Royal Icing nor made cut out cookies (except for circles lol). This year I decided to make some snowflake cookies and few other kinds as well. Off to the store I go!

The hardest part to these cookies is decorating them. The dough is the easiest dough I have ever made before.

Christmas Icebox Cookies

In stand mixer, beat butter until smooth and fluffy. Add icing sugar into the butter. Start on low-speed and increase to medium – high. Beat until fluffy.

Add egg and vanilla and mix until it’s all joined. Next, add the flour and the salt. Blend on low until dough comes together. Shape according how you want to bake it (discs, tube, small discs, etc…) Chill for at least 2 to 3 hours.

Take out of fridge and let sit for about 20 minutes. Knead, roll out, cut out shapes

Bake at 325 for 8 to 14 minutes.

NOTE:

The reason I give such a vague cooking time, depends on your oven. My oven is TERRIBLE. So when a recipe says 12 to 14 minutes, mine are done 8 -9 minutes. If I’m not right at the oven I usually burn my first batch 🙁 lol

Just watch the cookies, and when they don’t have a shine to them anymore they should be done.

 Want to know how to make the Chocolate ones? It is the same recipe except omit 1/2 cup flour and replace it with 1/2 cup cocoa powder. YUP it is that simple!

Ingredients
  • 1 cup Unsalted butter room temperature
  • 1 cup Icing sugar sifted
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 1/2 cups All-purpose flour
Instructions
