Santa is always so busy at this time of year that he doesn’t have time to eat all the cookies that are left out for him. Why not make him a Snack Pack to go and give him a few different kinds to choose from? I’m sure you will make the NICE list with a gift like this to Santa Claus.

 

Sunday Update: I’m making some Whipped Shortbread right now (more in the oven lol) . We don’t like candied cherries, so I decided to fold in 3/4 chopped walnuts into the mix after  whipped and before baking.

Whipped Shortbread Cookies

Servings: 3 dozen
Ingredients
  • 1 cup butter
  • 1 1/2 cups flour
  • 1/2 cup icing sugar
  • Red / green glazed cherries
Instructions
  1. Combine ingredients and beat for 10 minutes with electric beater or stand mixer.

  2. Drop from teaspoon onto cookie sheet. 

  3. Decorate with red or green glazed cherry pieces

  4. Bake at 350 F for 12 to 15 minutes or until lightly browned.

No Bake Peanut Butter Squares

Course: Desserts
Ingredients
  • 1 cup butter
  • 1 cup peanut butter
  • 2 2/3 cup icing sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups graham wafer crumbs
Topping:
  • 1 1/2 cups chocolate chips
  • 1 teaspoon vegetable oil
  • 2 tablespoon butter
Instructions
  1. Soften butter and peanut butter in microwave to blend. 

  2. Stir in sugar, graham wafer crumbs and vanilla.

  3. Pat into greased 9 x 13 pan.

  4. Combine chocolate chips and oil; soften in microwave for 1 minute or until soft.

  5. Blend and spread over peanut butter base. Chill until set

  6. Best kept in refrigerator.

No Bake Chocolate Macaroons

Servings: 2 dozen
Ingredients
  • 3 1/2 cup oatmeal
  • 1/2 cup coconut
  • 5 tablespoon cocoa
  • 1 teaspoon vanilla
  • 1/2 cup margarine
  • 1/2 cup milk
  • 2 cup white sugar
Instructions
  1. In a large bow, mix oatmeal, coconut, cocoa and vanilla together

  2. In saucepan mix margarine, milk and sugar over medium heat; stirring often. When mixture begins to foam, remove from heat. 

  3. Add to dry ingredients and stir well. 

  4. Drop cookies off spoon onto wax paper. Cool.
