So I have decided that Sunday will be my cooking day. Football is on my TV all day long. I’m not a sports fan, so I like to spend all day in the kitchen testing recipes. Today was Homemade Lasagna, Fruit Brownie and Shrimp Pizza (recipes to follow later this week).

 

Chocolate Mousse Fruit Brownie

Brownie Mix

In a stand mixer, add  2 cups of the brownie mix, eggs, vanilla and Kahlua. Mix until smooth. Pour into baking pan.

Bake for 20 minutes in preheated 350 F oven. Take out of oven and let cool.

Chocolate Mousse

When the brownie bottom is cool. In stand mixer add 3 – 4 cups of whipping cream and both packs of chocolate pudding. Beat until thick enough to spread over brownie bottom.  Let chill about 20 minutes

Toppings

Take fruit and decorate the top however you like. Cover with Saran wrap and refrigerate until ready to serve.

Ingredients
Brownie Bottom
  • 1 2 cup portion brownie master mix see link below for recipe
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 tablespoons Kahlua optional (see link below for homemade recipe)
Chocolate Mousse
  • 3 cups heavy whipping cream
  • 2 boxes instant chocolate pudding
Toppings
  • 6 large strawberries sliced and chilled
  • 1/2 cup blueberries chilled
  • 1/2 cup green grapes sliced in half and chilles
  • 1 large banana sliced (I dipped my slices in sugar so they would not turn brown)
