Servings: 1 9 inch pie
Ingredients
  • 3 large egg whites
  • 1/8 teaspoon cream of tartar
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla
Instructions
  1. Preheat oven to 275 F

  2. In a stand mixer, add egg yolks and cream of tartar and mix at high speed until soft peaks form

  3. Gradually sprinkle in sugar ( 2 tablespoons at a time), beating after each addition 2 minutes or until sugar is dissolved completely about 15 minutes. 

  4. Add vanilla and beat until stiff peaks form.

  5. Spoon mixture into a greased 9 inch pie plate, smoothing in center. Pile high on sides to create a shell

  6. Bake for 60 minutes or until crisp and light brown. Turn off oven, open just a crack and let sit in the oven another 60 minutes.
