Graham Cracker Sandwich Cookies

Well the other day I wanted to make cookies, I love peanut butter, others like chocolate chip and then marshmallow is a favourite around the house as well. I decided to be funny and make a cookie that had everyone’s favourite flavour. Turns out that there is a new favourite cookie in the house.

Melt about 1 cup of chocolate for this step: With a pastry brush, brush melted chocolate on one side of 24 crackers. Place chocolate side up on cookie sheet (line with parchment paper) and refrigerate.

Make peanut butter filling:

In a stand mixer, add peanut butter and icing sugar and mix until creamy. Add vanilla and milk and mix together. Set aside

Make marshmallow fluff.

Add 2 cups of marshmallow fluff to peanut butter mixture.

With a cookie scoop, make 24 marshmallow peanut butter balls. Set aside

Take a marshmallow peanut butter ball and place one in the middle of each graham cracker with chocolate on it. Spread evenly over cracker.. Take the rest of the graham crackers and place on top of the peanut butter filling, press lightly making a sandwich,  Place pan with cookies in freezer

In a double boiler, melt your chocolate until it is all  melted and smooth. Take off heat.

On a parchment lined pan, get a cooling rack and place on top. Take the cookies out of the freezer and dip each cookie into chocolate. With a fork, cover the cookie completely and remove from the chocolate. Place on cooling rack. When you have covered all 24 cookies with chocolate, place the pan of cookies in the fridge for at least 4 hours, setting the chocolate and hardening it.

Ingredients
  • 48 graham crackers 2'" x 2"
  • 2 cups marshmallow fluff
  • 1 batch peanut butter filling
  • 2 pounds melted chocolate
Peanut Butter Filling
  • 2 cups smooth peanut butter
  • 1 cup icing sugar
  • 1 teaspoon vanilla
  • 3 teaspoons milk
Instructions
