Well Football Sunday means something different for everyone in my house. The guys watch Football from the time they open their eyes in the morning until they close them at night.
It means for me Baking Day! I don’t like sports too much. I know nothing about Football and can’t even pretend too ( trust me I have tried ) If I had to pick a sport to watch it would be Baseball, but that’s pretty much it. Unless it is my kid playing the sport it just doesn’t interest me.
With only 1 tv in the house, it is inevitable that I stay in the kitchen all day. So along with crock-pot spareribs, I made BBQ spareribs in the oven, and then cupcakes! I made Vanilla with Raspberry flavour cupcakes, dulche de leche filling, and fudgy chocolate frosting and decorated for Halloween
- 1/2 teaspoon baking soda
- 1 1/2 cups sugar
- 1 1/2 teaspoon vanilla extract
- 4 cups whole milk
In a large saucepan, combine milk, sugar, and vanilla on medium heat
When it begins to boil, lower the heat until it starts to simmer just slightly, stirring often
When the sugar has dissolved, remove it from the heat and add baking soda. Mix to combine all together
Return back to heat and let it simmer for roughly 1 1/2 to 2 hours. Check on it frequently and stir
When it starts to turn a beautiful light brown colour, start stirring every 4 to 5 minutes
You will know it's done when you can take a spoonful, place in a dish and run the back of the spoon through the middle. If it does not recombine; it is done. Use a strainer to remove any lumps and whisk until smooth and creamy
Vanilla Cupcake Recipe
These cupcakes are delicious! Vanilla cake with a hint of raspberry, Dulche De Leche filling with creamy and smooth chocolate frosting.
- 2 3/4 cup + 2 1/2 tablespoons white cake mix
- 1 package vanilla pudding
- 1 teaspoon raspberry flavouring
- 3/4 cup + 3 tablspoons water
- 3 large eggs
- 2/3 cup vegetable oill
Mix all ingredients on low speed of stand mixer for about 1 minute until all ingredients are mixed together.
Mix on medium - hi speed for about 3 minutes until all lumps are gone.
Line two (12 and 6 ) cupcake pans with liners. Fill each about 3/4 full with mix.
Bake at 375 F for 25 minutes or until a toothpick inserted into the centre of a cupcake comes out clean. Let cool
I used and icing tip to put a hole in the center of each cupcake. I then filled each one with Dulche De Leche then put the cupcake pieces from the holes back into the cupcakes
While the cupcakes are cooling, you can start making the frosting
- 12 tablespoon butter
- 4.5 ounces chocolate roughly chopped
- 1 1/2 cups semi sweet chocolate chips
- 1/2 teaspoon vanila
- 1 1/2 pounds icing sugar
- 1/2 cup whole milk
Microwave both chocolates and butter in 30 intervals, stirring after each time. When it is silky smooth, add vanilla and stir
Pour icing sugar into bowl of stand mixer. Slowly add the chocolate mixture, keeping the machine running, add milk slowly, only adding as much needed to get the consistency of frosting you need
