Jo Jo’s Oatmeal Cookies | Classic & Delicious

Oatmeal cookies are an all time favourite! You can add chocolate chips, raisins, coconut or just have them plain.

This Classic recipe makes them soft and chewy and so Yummy!

Jo Jo’s Oatmeal Cookies

Preheat the oven to 350 F, then spray or use parchment paper to the cookie trays. In a mixing bowl cream sugars, margarine and vanilla. Next beat in the eggs and once the egg is incorporated add the dry ingredients.

Using a cookie scoop or a spoon, drop rolled balls of dough onto the cookie sheet.

Then take a fork and flatten them a bit. I sprayed my fork with cooking spray first.

Bake until golden brown. Depending on your oven I would say 8 – 12 minutes (I took mine out at 11 minutes)

I didn’t put coconut in these ones, they are just Oatmeal and so soft and chewy!

Servings: 4 dozen
Ingredients
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup margarine
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 cups rolled oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup coconut optional
  • 1/2 teaspoon salt
Instructions
  1. Preheat oven to 350 F

  2. Cream sugars, margarine and vanilla, beat in eggs


  3. Mix in remaining dry ingredients


  4. Roll into 1 inch balls and place on greased cookie sheet


  5. Flatten with a fork and cook 8 to 11 minutes until bottoms are a nice golden brown

    ( I cook mine for 11 minutes)


  6. Remove from oven and let cool
