Giving It Another Try

Well as you can tell it is Fall season. I have decided to start eating healthier again, eating more vegetables and less cookies and cakes.

I’m not sure if you have seen the infomercials on PIYO (Pilates and Yoga combined together) they advertise it for 3x payments of $33.00. Well I have had many back issues in my life have also had back surgery 2x for broken discs,  so I due to all that, I have to be careful with the kind of workouts I do. The doctor said Pilates or Yoga would be best for me.When I seen the PIYO infomercial I thought WOW that seems like it will be easy but that’ alot of money. I don’t want to spend $100.00 for “another” workout disc.

I went online and started searching Amazon for it and was able to find the Deluxe and complete set alot cheaper. It even came with a measuring tape for your measurements ( that wasn’t very nice lol)

Is This Legit?

I was a little scared thinking it might just be burnt copies or something, but thought I would try and order it that way instead and save a ton of money! It got here within one week and it is the EXACT deluxe kit! Not sure whether I’m happy or sad because I have been using it for 2 days now and BOY OH BOY I forgot how many muscles I have that I’m not using. I’m so sore lol and I was wrong; it is NOT easy, but it is LOW IMPACT.

Well if I’m going to try and take working out seriously, I had better start eating better and try cutting some of the sugar out of my life. So I’m starting with a Pumpkin Broccoli Stir – Fry.

Not sure how I’m going to bake for the family and for you all without indulging a bit, but I’m sure going to try for the 60 days of the program.

Pumpkin Great For Health

Adding Pumpkin into it is great for the immune system, lots of Vitamin A which helps the skin, and the seeds are great for heart health. You can roast them and add them for an extra crunch and they look pretty as well.

I think for Sunday dinner I will make Pumpkin & Potato Gratin. Wish me luck and pray I can keep up on the PIYO workouts!

Garden fresh vegetables in a nice simple and light sauce . A light and healthy meal.

Ingredients
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 teaspoons Soy sauce
  • 1 1/2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons cooking oil
  • 2 1/4 cup snow peas trimmed
  • 1 1/2 cup mushrooms
  • 3/4 cup small cauliflower florets
  • 3/4 cup small broccoli florets
  • 1/3 cup thinly sliced celery
  • 3/4 cup thinly sliced carrots
  • 1/2 cup sweet yellow peppers julienned
  • 1/3 cup thinly slice green onions
  • 1/2 cup sweet red peppers julienned
  • 1/2 cup sweet orange peppers julienned
Instructions
  1. In a small bowl, add cornstarch into broth. 

  2. Next add soy sauce, sugar and salt. Stir and set aside.

  3. In skillet / wok  heat oil. On medium heat add remaining ingredients.

  4. Stir-fry for 3 to 5 minutes until vegetables are tender but crisp. 

  5. Stir the cornstarch / broth mixture and add to the vegetables. 

  6. Heat and stir for about 2 to 3  minutes until the sauce starts to bubble and thicken. Remove from heat and serve
