Citrus Pomegranate Pavlova
This is a beautiful dessert. It is naturally sweetened with oranges, grapefruit and pomegranate and very low in sugar.
5 large egg whites
1 1/4 cup sugar
2 tsp cornstarch
1 tsp vanilla extract
1/2 tsp distilled white vinegar
1 cup fat free Greek yogurt
1/2 cup heavy cream
2 tbsp icing sugar
1/2 tsp vanilla extract
4 oranges, peeled and sliced
1 grapefruit, peeled and sliced
1/2 cup pomegranate seeds
Heat oven to 200 F. Line baking sheet with parchment paper. Whisk egg whites and 1/4 cup of the granulated sugar. Beat with electric mixer on medium until soft peaks form. Add cornstarch and remaining sugar; and beat to stiff peaks. Fold in vanilla and vinegar. Spread meringue in 9″ circle on baking sheet and dent the centre. Bake 1 1/2 hours. Remove and cool for 3 hours.
Whisk filling ingredients until stiff peaks form. Dollop onto meringue. Add toppings.
