Meatball And Bean Soup
Fall is almost here. The trees are starting to turn colours and it is starting to get chilly at night. Time to get all cozy & curled up in front of the fireplace with a good book and a hot cup of soup.
1 lb extra lean ground beef
1/4 cup chopped onion
1 clove garlic, minced
1 tsp ground cumin
1/2 tsp salt
2 cups chicken broth
1 10 oz package frozen chopped broccoli
1 can diced tomatoes, drained
1 15 oz can chick peas, drained
1/2 tsp dried thyme leaves, crushed

Combine beef, onion, garlic, cumin and salt, mix lightly. Shape into 1 inch balls. Brown meatballs in a large skillet over medium-high heat, turning occasionally.
Place broth, broccoli, tomatoes, beans, thyme and meatballs in slow cooker. Cook on low 4 to 5 hours.
Season to taste with salt and pepper.
