Eddy Spaghetti – Easy Baked Spaghetti Recipe

I used to make just normal Spaghetti, boil water, add noodles, mix ground beef into mix and bammsupper is made. Well I had friends staying with me a while back and they thought they would make me dinner one night as a thank you for letting them stay. Well I was watching him add zucchini and cheese and then he puts it in the oven. I thought he had lost his mind. It was the BEST pasta I have ever eaten. I have been making my own variation of his dish ever since.

I add mushrooms, green peppers (well just check out the recipe lol) Iam always told this is my best dish I make. In fact I usually have to make enough for at least 10 people, so I can send some home to my son, send it to my sisters house as well (wish I could get all my dishes back from them, I lose so many containers this way). Over the years I have added different items, taken some out and then I started making my own sauce. I make the sauce in the crock pot and cook on low all day long. I add a loaf of homemade garlic bread, greek salad and a simple dessert and VOILA a meal fit for a king! Oh and I almost forgot to tell you. My friends name is Eddy

Eddy Spaghetti Bake

Spaghetti cooked al dente, lots of yummy veggies and smothered with sauce and cheese. This dish truly is a winner with my family. Every-time I make it I have to make enough for my family at home, then take some to my son and if there is still some left my sister comes and takes it. Yes I have to make LOTS when I make it.

Ingredients
  • 1.2 litres Ragu Spaghetti Sauce
  • 2 lbs ground beef
  • 1 onion
  • 1 lb fresh mushrooms
  • 3 sweet peppers I like color so I use yellow, red and green
  • 1 zuchini
  • 1 can Campbells Tomato Soup
  • 4 cloves garlic minced
  • 1 can tomatoes diced
  • 1/4 tsp basil dried
  • 2 tsp oregano dried
  • 2 cups mozzerella cheese shredded
Instructions
  1. Fry the ground beef in a pan until brown with the onions and garlic. 

    NOTE: When I make italian sausage I usually make a few extra and freeze until Spaghetti Day, I add it with the ground beef for more flavour.

  2. In a crockpot; add all the other ingredients except for cheese. I chop in nice big thick pieces and you might notice you cant see the mushrooms in this. Some of my family don't like them so I ground them up and then put them in haha. They don't know they are in there and still LOVE it. I usually leave this sit on low for about 6 hours, until the veggies are nice and tender but still firm. 

  3. When sauce is ready I cook the pasta in a pot on the stove in boiling water. I cook al dente because it will still cook some in the oven.

  4. Reserve at least 2 cups of pasta sauce before mixing all together. Strain the pasta and put it back into the pot ( not on the stove). Mix 1/2 cup cheese and the rest of the sauce in the crockpot all together. You will notice how nicely the cheese will melt into the pasta YUMMY.

  5. Heat oven to 350 F . Take the mixed pasta dish and put it into a casserole dish. Take at least a cup of the sauce and pour it on top. Take the rest of the cheese and cover the top.

  6. Cover it and put it in the oven for 10 min, or until all the cheese has melted. 

  7. Add some garlic bread and a nice salad and serve. You should still have some sauce remaining. I usually have it in case someone wants their pasta really saucy.

Recipe Notes

Again you can add some spicy sausage for more flavour. I sometimes add a tiny bit of hot pepper flakes as well.
