  • 1/2 cup hard margarine
  • 2 cups vanilla wafer crumbs
Second Layer:
  • 40 caramels
  • 1/4 cup skim evaporated milk
  • 1 cup chopped pecans toasted
Third Layer:
  • 2 8oz pkg of cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 2 large eggs
  • 1/2 cup semisweet chocolate chips
  • chocolate glaze (see recipe below)
  1. Melt margarine in small saucepan, add wafer crumbs. Stir well. Press in bottom and ! inch up side of 9 inch spring-form pan. Bake at 350F for 5 minutes and cool.

Second Layer:
  1. Heat caramels and evaporated milk in medium saucepan, stirring often, until smooth. Pour over crust.

    Sprinkle with pecans.

Third Layer:
  1. Beat cream cheese, sugar, and vanilla in large bowl until smooth. Beat in eggs on low, 1 at a time, just until blended.

Heat chocolate chips in small saucepan over hot water, or on low, stirring constantly, until smooth. Do not overheat. Stir into cream cheese mixture. Pour over pecans. Bake in 350 F over for 50 to 55 minutes. Run paring knife around edge of pan to allow cake to settle evenly without cracking. Cool

  2. Remove sides of pan. Place cake on rack set on waxed paper. Pour glaze over top and down sides of cake.

Heat whipping cream in small saucepan on low. Add chocolate, stirring constantly, until melted and smooth. Makes about 1 cup.
