Quick and Easy Triple Chocolate Slice – Can you say OMG Delicious!

Triple Chocolate Slice

This is one of the most decadent healthy chocolate slices you could ever want to sink your teeth into!

the bottom

  • 1 cup almond meal
  • 1 cup desiccated coconut
  • 2 tablespoons honey*
  • 3 tablespoons cacao or cocoa
  • 1 tablespoon coconut cream
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt

the middle

  • 6 tablespoons cashew butter**
  • 3 tablespoons cacao or cocoa
  • 3 tablespoons honey
  • 3 tablespoons coconut oil, liquid
  • 3 tablespoons coconut cream
  • 1 teaspoon vanilla extract
  • pinch of salt

the top

  • 3 tablespoons cacao or cocoa powder
  • 2 tablespoons coconut oil, liquid
  • 1 tablespoon maple syrup
  1. Line a loaf tin with baking paper over-hanging the sides for easy removal. Mine measures 19.5cm x 9.5cm.
  2. Place the ingredients for the bottom layer into your processor and blend at high speed until the mixture resembles a sticky crumb. Press the mixture into the base of your prepared tin.
  3. Place the ingredients for the middle layer into your processor and blend at medium speed until the mixture is smooth and well combined. Try not to over-blend. Pour the mixture over your base and place in the fridge to set.
  4. Once set mix together the ingredients for the top layer. Pour the mixture over your slice and spread to cover the middle layer. Place the slice in the fridge to set.
  5. Slice. Serve. Eat and enjoy.

*you can use rice malt syrup if you prefer.

**cashew butter / spread is readily available in the health section of the supermarket and from health food stores. chocolateAlternatively you can easily whip up your own, here is our recipe.

Notes –

  • I place the slice into the freezer for 20 minutes prior to slicing. Once sliced this can be stored and served straight from the fridge or freezer, it will not be stable at room temperature.
  • When making the chocolate topping ensure the coconut oil is not heated, you may even find it helpful to add the oil once tablespoon at a time.
