Ingredients
  • 2 cups almond flour
  • 1 Cup Coconut sugar
  • 2 Tsp Baking powder
  • 2 Tsp Cinnamon
  • 2 Cups Shredded carrots
  • 1/2 Cup Unsweetened coconut
  • 1/2 Cup Dried cranberries
  • 1/4 Cup Sunflower seeds
  • 1/4 Cup Pumpkin seeds
  • 1 Apple Peeled and grated
  • 1/2 Cup Safflower oil
  • 3 Large Eggs
  • 1/4 Cup Coconut milk
Instructions
  1. IIn large mixing bowl,combine flours,Baking powder & cinnamon.Stir in carrots,cranberries,seeds,Coconut and apple. In separate bowl, combine eggs, oil, coconut sugar and coconut milk and beat well. Add set mixture and stir well to incorporate. Scoop mixture into large muffin cups. Bake at 350 for 20 minutes
