Greek Rotini Salad

We love the fresh veggies, tangy olives and feta of a classic Greek salad-but who knew it was even better with pasta?

Course: Salad
Servings: 6 cups
Ingredients
  • 3 cups Cooked rotini pasta about 1 1/2 cups uncooked
  • 1 cup Diced english cucumber with peel
  • 20 Grape tomatoes halved
  • 1/2 cup Chopped green pepper
  • 1/2 cup Chopped red onion
  • 1/4 cup Whole pitted kalamata olives
  • 1/3 cup Olive oil
  • 3 tbsp Lemon juice
  • 2 tbsp Chopped fresh parsley or 1 1/2 tsp flakes
  • 1 tsp Chopped fresh oregano or 1/4 tsp dried
  • 1 clove Minced garlic or 1/4 tsp powder
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 3/4 cup Crumbled feta cheese
Instructions
  1. Combine first 7 ingredients in large bowl.

  2. Combine next 7 ingredients in jar with tight-fitting lid. Shake well. Drizzle over pasta mixture. Toss

  3. Sprinkle with cheese
